MY RECIPES


YUMMO MANGO SALSA.......So simple and yummy over
Grilled Tassie Salmon!
Chop a Bowen or Kensington Pride Mango in to small chunks add a chopped red onion with chopped fresh Corriander, (as we are on the road i decided to buy a tube of Gourmet Garden.... fresh corriander, from Woolies)
Mix all ingredients, let stand in fridge till Salmon is cooked!.....
Pour over & enjoy!!!!!




CREAMY GARLIC VEGE MORNAY.......Steam any vegetables you like, make a white sauce with butter, onion & lots of garlic add plain flour ...make a roux, stir like mad whilst adding half milk, once the first bubble bubbles, turn off & add half a jar of fresh cream once thick pour over veges in a Pyrex dish top with grated tasty cheese chopped chives ..Brown under grill..Or return to oven for an hour to brown!....This is so yum & a little bit naughty with the cream but hey it is also healthy!




OUR FAMILY FAVOURITE QUICK & EASY CURRIED SNAGS.......Boil only the best fat sausages, when done & cooled remove skins...In a saucepan make to directions 2 pkts of (or 1 packet for only two people, unless you want left overs like me...I always do two pkts) Dutch Curry & Rice Soup....Once the soup is cooked return the snags & simmer on low for a further 10 minutes....Serve over rice or for brecky on toast....It is good!




MY MUMMY'S YUMMY PEA & HAM SOUP...........Buy lot's of bacon bones plus about 2 fat ham hocks or if you are lucky to have just had a leg of ham use the end of it!!!......Place in a large solid pot with lots of sliced onion, thickly sliced carrots, pkt of yellow split peas, lots of cracked black cover with water & simmer for probably 4 hours or more on low!....YUMMY!  Especially with a crusty fresh bread loaf & of course a good Vino or Beer!!!




MY PINEAPPLE UPSIDE DOWN CAKE............Cream together with electric beaters butter & sugar ( as i don't do measurements i cant tell you how much of each exactly ) Probably about 400 grams of butter & about 1 & 1/2 cups of sugar...I think? Anyway when fluffy crack in an egg, self raising flour & milk continue beating till completely until lump free & fluffy!......Place a can of roughly drained crushed pineapple in a greased cake tin or Pyrex dish add cake batter over,  bake till cooked!...Serve with custard or whipped cream! Delishio!!!




SNACKY SWEET CHILI TOAST...........Toast one side of bread under the grill, then when brown, spread sweet chili sauce over the uncooked side, sprinkle with a little sugar ( say about a half a teaspoon ) top with grated cheese, cook under grill until bubbly & golden!... Done Yum!




SHARON'S CAMP FIRE SAVOURY DAMPER.......With clean finger tips mix butter through self raising flour till fine &crumbly, add chopped onion, capsicum, bacon, tomato & whatever else takes your fancy, also add a bit of sugar, i suppose about a dessert spoon full, cracked black pepper & some salt. Mix through then make a well in the centre, add enough milk mixed with an egg into it, until it becomes sticky & holds its shape! Oil your camp oven, blob the mix in even it out, then put on the lid & place on coals in the fire you have prepared earlier, put some more coals over the lid. Leave for prob about an hour. Check, when cooked cut & spread with real butter.....Yummo & great with anything!


MY COLD come HOT PASTA SALAD....Saute chopped onion, capsicum, bacon, with chunks of ham or chicken, in a blob of butter with powdered chicken stock, cracked black pepper, toss through cooked small pasta such as macaroni, stir through as much Neil Perry's lime chilli mayo to taste. Finish off by stirring through chopped celery!.......Serve hot the next night, in a casserole dish topped with grated cheese & bake!!


OVEN LESS CAKE..........Cream together butter, sugar with beater add 2 eggs continue beating tip in flour & milk mix till fluffy....Pour into a greased cake tin that fits into a camp oven with trivet in the bottom! Cook on stove top on medium for about an hour!.....PERFECTION!!!


NEIL PERRY'S LIME & CHILI MAYONNAISE.....I discovered this delicious taste sensation when i was looking for a mayo to add to my pasta salad above.
Anyway when i got home i opened the jar & had a spoonful to taste it, well 1/2 the jar later & i had to stop myself from eating it! It is too yummy! ........ Is great with fresh prawns just peel & dip, yummy spread over a piece of BBQ steak! I often have it on toast with hard boiled eggs!!....Seriously i love this stuff! So many uses for it, i would say i go through a jar a month!!! .....Mark likes it but not as much as me.......You can buy it at woolies in the section with the pkt lettuce's!








PIZZA WITHOUT AN OVEN........Mission tortillas or Mountain Bread Corn, spread with a mix of sauces of your choice, yesterday i used Neil Perry's Lime & Chili Mayo mixed with a plop of tomato sauce!...Sprinkle with cheese, chopped cooked chook, slices of onion, sliced mushrooms, chopped cabanosi, chunks of pineapple, shredded ham, heaps of cracked black pepper & topped with extra cheese...Or just add whatever you like!!!......Cook on a rack in the electric fry pan on about 7 with lid on for about 1/2hour...Then take off the rack & put it straight on to bottom of fry pan to crunch up & brown the base!.....Another yummy topping is a mix of tom & BBQ sauce together, cheese, ham, bacon, salami, onion, mushies, feta stuffed bell peppers sliced, cracked pepper, top it all off with slices of Brie...when cooked, top with some baby leaves!!!.....With Vino = Belisimo!


Or Pizza can also be made in a fry pan on the stove top......Place mountain bread in fry pan top with grated cheese & another sheet of mountain bread on top of that....Add toppings, place lid on & cook on low till done then brown under grill!...
Too Easy!









MY OLD FAITHFUL POTATOES.......Bake whole cleaned not peeled potatoes all
similar sizes are good. in a moderate oven (or if you don't have an oven @ the time, the old faithful camp oven will do the trick!!!) till soft poke with fork, cool slightly then cut in half, scoop out potato leaving the shell behind...Mash add sour cream, cracked black pepper & grated cheese mix through till it is a creamy mash, taste & add more sour cream & cheese if needed! Spoon mix back in to shells, place on a baking tray top with extra grated cheese sprinkle with eschalots that is the fancy way to say shallot!!....These are a winner every time, great at parties! P.s you could also add cooked bacon, onion, capsicum or whatever takes your fancy!


SHARON'S CABBAGE!.........In a big pan add a big blob of butter, slice cabbage place in a pan, add a large chopped onion & bacon, cracked black pepper, toss through with tongs, saute till soft add more butter if needed! Belissimo!
My New Quicker Better Cabbage...........Make the same way, but instead of chopping a cabbage up buy a pkt of ready chopped coleslaw mix from woolies!.....
This is Good & so simple!!

THE ONLY HAM STEAKS & PINEAPPLE!........Get good quality fat ham steaks, place in a pan with a big blob of butter, pour in all juice from a tin of golden circle pineapple slices, simmer slowly, turning occasionally, after about 5 minutes turn up the heat, add pineapple slices, cook till both steaks & pineapple are golden on both sides, the juice should now be a yummy syrup! Plate up!  Fancy wording!.....
Place steaks on a bed of mashed potato with my cabbage, julienne carrots, peas & corn, or whatever you want! Pour Syrup over add cracked black pepper!... & YUMMO!!

EASY PEASY WRAPS!.....Mission original wraps or Mountain Bread Corn both from woollies, lay out flat, add grated cheese, chopped cooked chook, slices of onion, pineapple chunks..... Add now cracked black pepper & a squeeze of mayo to taste, then top with baby leaves....Start in the centre roll, then fold in the sides & wallah!
 That's a wrap!


But wait there's more!....Heat a non stick fry pan on low to med, place wrap in till heated through & golden brown! YUM!!

THE BEST HOT CHIPS IN THE WORLD!  Say's us.........Cut potatoes into chips fat ones. Heat fresh oil in pan, over highest heat, cook till just soft. Remove & set aside, do something else while they sit, like maybe start cooking your fresh fish, if you are lucky enough to catch some! I know you maybe thinking this does not sound good the chips sitting & soaking up all that oil?.... They need to be cooked twice, that way they end up crunchy on the outside & soft like mashed potato inside.......After they have sat (doesn't matter how long for), put them back on highest heat, until they crunch up & turn golden brown. Take out with a strainer or tongs, put in a stainless steel bowl, toss with salt flakes wa-lah...... Beats any shop ones we have ever had!





MY MOTHERS REAL SPAGHETTI!.....
 NOT THAT TINNED RUBBISH!
In a pan saute chopped onions with cracked black pepper in a big blob of butter till soft, then grate in one lge block of Kraft processed cheese (The one in the blue box in foil, that is on the shelf not in the fridge in the supermarket) stir till all cheese has melted, over slow heat, this takes a while, when melted through, pour in a lge tin of Rosella tomato soup stir more then add cooked tubular spaghetti, pull through with tongs!.........
It's A Winner!!!....Makes A Great Weekend Lunch!

SHARON'S FAMOUS ONE & ONLY...... POTATO SALAD!
Cut potatoes into chunks, boil till just soft, while still hot put in glass bowl with chopped onion, normal pepper not cracked, cooked peas, only ever praise mayo, roughly cut up hard boiled eggs, gently stir through! Should be kinda soft & mushy by now! Add shallots on top for decoration!...A Winner every time!

MY FARQUAR SPECIAL.......Chop bacon, onion, capsicum, tomatoes, mushrooms saute in fry pan with big blob of butter & cracked black pepper, simmer till soft with lid on, add more butter if needed. Then make wells in it & crack how ever many eggs you want, put lid on until eggs are cooked! Serve with thick crusty toast & real butter! Yummy...This brecky tastes even better done over an open fire by the side of a river!! Hence the name Farquar that is where i first cooked it, at Farquar Inlet while we were camping one year!


MY FAMOUS CANNELLONI........Saute mince in fry pan with chopped onion, salt flakes, cracked pepper, & Eta BBQ sauce.... Cook like making spag bol....Simmer till cooked. When cool, stuff into shells put in baking dish, pour over tomato soup top with grated cheese & bake in oven till cooked....Serve with toss salad garlic cream potatoes & crusty bread stick...Oh & a good Red!


SHARON'S GARLIC CREAM FETTUCCINE........Saute green prawns cut up, bacon, onion, garlic, salt & pepper in bit of butter, with a splash of olive oil in fry pan add cooked peas, carton of fresh cream & toss through cooked pasta with tongs!...Good bottle of Vino, Crusty Garlic Bread! Enjoy!
 
MY PUMPKIN SOUP....Cut pumpkin into chunks & boil with a sprinkle of Italian herbs, when soft drain leaving a little juice in the bottom add chicken stock a jar of fresh cream, blend till smooth with hand blender. Taste & add more chick stock or salt if needed!.........Serve with a blob of sour cream, cracked black pepper, crusty french stick a glass of Sav B.... Yummo!


 SHAZZAS ROCKY ROAD......Melt 2 big blocks of cadbury fruit & nut chocolate over pot of boiling water, when melted remove from heat, mix in 2 pkts of raspberry lollies 2 pkts of marshmallows mix together then plop out on to grease proof paper flatten down & put in fridge till set..Cut to desired sizes!
Yummy with coffee or a glass of red!




SHARON'S LIME DRIZZLE.......Combine in a jar lime marmalade, pineapple juice, apricot jam, salt, cracked black pepper , left over olive oil from cooked crumbed chicken tenderloins , water & shake!!!. Then add to pan bring to slow boil, till reduced slightly..Remove & drizzle over a bed of salad & crumbed chicken tenderloins! YUMMO!!




MY QUICKIE CHICKIE SOUP............Saute chopped onion in a blob of butter, add about a dessertspoon of massel chicken stock powder, cook through pour filtered water over, strip a BBQ chook of its meat & add carcass to soup.....Simmer for about an hour, then pour in approx 1 to 2 dessertspoons of Kecap manis...That is a must!!!!.....
 Remove carcass, add chicken & a can of creamed corn!...Done & Yum!



EASY & FANTASTIC EVERY TIME
CRUNCHY GARLIC BREADS ROLLS.....Buy from woolies or bakers delight flat rolls...mix fresh garlic (or cheat like me & use Rosella garlic in a jar), with devondale extra soft butter, or just use what ever butter or marg you want!
Cut roll in half spread with butter mix, bake under grill butter side up till brown & sizzly!.......A winner every time! 



HONEY CURRY CHICKEN......SHAZZY'S WAY!
Saute  a large chopped onion in a big blob of butter, with a generous amount of cracked black pepper, add chopped chicken thigh fillets.....Moving often, then sprinkle to taste Keens Curry Powder, using tongs toss thru, add 4 or 5 big squirts of honey (or how ever much you think)  Next is my cheaty secret ingredient!
Pour in a jar of Chcken Tonight ...Golden Honey Mustard, then add julienned carrots
which you prepared earlier & frozen peas!
Toss thru, put the lid on & simmer for about an hour!
Serve with Mashed Potato Or Rice...........ENJOY!
